Imli ki Chutney Recipe for Chaat


Imli ki chatni is a popular Indian condiment made from tamarind, spices, and herbs. It is a tangy and flavorful sauce that can be used as a dip, spread, or condiment. Imli ki chatni is a good source of vitamins and minerals, including vitamin C, vitamin A, and iron. It is also a good source of fiber.

Ingredients:

o   1 cup tamarind pulp (extracted from approximately 1/2 cup of tamarind soaked in 1 cup of warm water)

o   1 cup jaggery or sugar (adjust to taste)

o   1 teaspoon roasted cumin powder

o   1/2 teaspoon red chili powder (adjust to taste)

o   1/2 teaspoon black salt

o   1/2 teaspoon ginger powder (optional)

o   1/2 teaspoon garam masala (optional)

o   A pinch of asafoetida (hing)

o   Salt to taste

o   Water, as needed


Instructions:


1. Start by soaking approximately 1/2 cup of tamarind in 1 cup of warm water. Let it sit for about 15-20 minutes to soften.

After soaking, gently squeeze and knead the tamarind to extract the pulp.

Strain the tamarind pulp through a sieve to remove any seeds or fibers, and set the smooth tamarind pulp aside.


2. In a saucepan, combine the tamarind pulp and jaggery (or sugar). Place the saucepan over medium heat and stir continuously until the jaggery (or sugar) dissolves completely. Add roasted cumin powder, red chili powder, black salt, ginger powder (if using), garam masala (if using), a pinch of asafoetida, and salt to taste.

Continue to cook the mixture over low to medium heat, stirring occasionally, until it thickens to a chutney-like consistency. This will take approximately 10-15 minutes.


3. If the chutney is too thick, you can add a little water to reach your desired consistency. Remember that it will thicken further as it cools, so keep that in mind when adjusting the thickness.


4. Allow the tamarind chutney to cool to room temperature. Once cooled, transfer it to a clean, airtight container or jar. You can store it in the refrigerator for an extended shelf life.


Tips:


·         For a smoother chatni, blend the tamarind pulp and spices together in a blender before adding them to the saucepan.

·         You can adjust the amount of sugar to taste. If you like a spicier chatni, add redder chili powder.

·         Imli ki chatni can be stored in an airtight container in the refrigerator for up to 2 weeks.
